Yep...Once loaded you could also simply uncheck any extra sections at desktop as well.
Actual template creation on mobile does not exist as of yet.

I am amazed we can do the pencil thing on this update.

The copy feature on mobile was just for internal testing. It shouldn't be used on real inspections yet as it won't reflect on the desktop yet. That's what we're trying to finish up right now.

would be great if you could copy it with out filled in fields

Les the whole point is guys want filled in fields .Not filled in is same as a standard template which you already have.
Certainly no need to create full templates from scratch in the field however.
